Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over creamy cauliflower mash with garlicky green beans, finished with a squeeze of fresh lemon for a bright, zesty zing.
INGREDIENTS
6.5 oz Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
2 tbsp Nonfat Plain Greek Yogurt
1 tsp Ghee
1 tsp Avocado Oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, approximately 10 to 12 minutes.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat and sear the salmon skin-side up for 4 minutes.
Flip the salmon and continue cooking for another 3 to 4 minutes until the skin is crisp and the fish is cooked through.
Remove the salmon from the pan and set it aside to rest.
In the same skillet, add the green beans and minced garlic, sautéing for 5 minutes until the beans are crisp-tender.
Drain the steamed cauliflower thoroughly and place it in a food processor or bowl.
Add the Greek yogurt, ghee, and a pinch of salt to the cauliflower, then blend or mash until completely smooth and creamy.
Serve the seared salmon over a generous bed of cauliflower mash with the garlicky green beans on the side.
