Mix the ingredients thoroughly until a uniform paste forms.
Place the mixture onto the prepared baking sheet and pat it down into a rectangle approximately 1/4 inch thick.
Bake for 15 to 20 minutes, or until the edges are golden brown and the chicken 'dough' is firm to the touch.
While the base is baking, whisk together the olive oil and minced fresh garlic in a small bowl.
Remove the tray from the oven and brush the garlic oil mixture evenly over the top.
Sprinkle the remaining 1 tablespoon of parmesan cheese over the oil.
Slice the rectangle into long strips and return to the oven for 3 minutes to melt the cheese and crisp the edges.
Serve warm, optionally with a side of clean-label marinara sauce.
