Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served over a bed of creamy garlic-infused cauliflower mash with a side of crisp steamed green beans.
INGREDIENTS
6.5 oz Wild Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
2 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
2 tbsp Nonfat Plain Greek Yogurt
PREPARATION
Place cauliflower florets and green beans in a steamer basket over boiling water.
Steam for 8-10 minutes until the cauliflower is very tender and the green beans are bright green.
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is golden.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
While the salmon cooks, place the steamed cauliflower in a bowl with the remaining teaspoon of olive oil, minced garlic, and Greek yogurt.
Mash the cauliflower mixture with a fork or immersion blender until smooth and creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve with the steamed green beans on the side.
