Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served with creamy cauliflower mash and garlic-sautéed green beans, finished with a squeeze of lemon for a bright, zesty touch.
INGREDIENTS
6 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
2 tsp Olive Oil
2 tbsp Non-fat Greek Yogurt
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until they are very tender, then drain thoroughly to remove excess moisture.
Place the steamed cauliflower in a food processor with the Greek yogurt and a pinch of sea salt, blending until creamy and smooth.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crisp and the flesh is opaque.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the remaining teaspoon of olive oil along with the green beans and minced garlic.
Sauté the green beans for about 5 minutes until they are crisp-tender and the garlic is fragrant.
Plate the salmon over a generous bed of cauliflower mash and serve with the garlic green beans on the side.
