Seared Salmon with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon fillet and garlic-sautéed green beans over a bed of cauliflower mash, finished with a squeeze of bright lemon.
INGREDIENTS
7 ounces Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
1 teaspoon Olive oil
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, then mash with a fork or immersion blender until smooth and creamy.
Season the salmon fillet with a pinch of salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crisp and the flesh is cooked through.
Remove the salmon from the pan and set aside.
Add the remaining olive oil to the same skillet and sauté the green beans and minced garlic for 3-4 minutes until the beans are bright green and crisp-tender.
Serve the salmon over the cauliflower mash with the garlic green beans on the side.
