PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper.
In a small mixing bowl, whisk together the olive oil, minced garlic, dried rosemary, dried thyme, sea salt, and black pepper.
Place the lean beef sirloin on one side of the prepared baking sheet and rub half of the garlic-herb mixture evenly over all sides of the meat.
In a separate bowl, toss the sliced carrots and broccoli florets with the remaining garlic-herb mixture until well coated.
Spread the vegetables in a single layer on the other side of the baking sheet.
Roast in the oven for 15 to 20 minutes, or until the beef reaches your preferred level of doneness and the vegetables are tender-crisp.
