Seared Salmon with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon served over creamy cauliflower mash with a side of garlic-sautéed green beans, finished with a bright and zesty lemon squeeze.
INGREDIENTS
6 ounces Salmon Fillet
1.5 cups Green Beans
2 cups Cauliflower Florets
1 teaspoon Olive Oil
2 tablespoons Nonfat Greek Yogurt
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
Drain the cauliflower thoroughly and transfer to a bowl; mash with the Greek yogurt and half of the minced garlic until smooth and creamy.
Season the salmon fillet with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 to 5 minutes per side until the skin is crisp and the flesh is cooked through.
Remove the salmon from the pan and set aside to rest.
Add the remaining olive oil to the same skillet and sauté the green beans and remaining garlic for 3 to 5 minutes until the beans are bright green and crisp-tender.
Serve the salmon atop the cauliflower mash with the garlic green beans on the side.
