Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon fillet served over creamy cauliflower mash with garlicky green beans, finished with a squeeze of fresh lemon for a bright, zesty finish.
INGREDIENTS
6 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
2 tbsp Nonfat Plain Greek Yogurt
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
While the cauliflower steams, season the salmon fillet with a pinch of sea salt and cracked black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side up for 4 minutes.
Flip the salmon and cook for another 3 to 4 minutes until the internal temperature reaches 145°F and the exterior is golden.
Remove the salmon from the pan and add the remaining olive oil along with the green beans and minced garlic.
Sauté the green beans for 5 minutes until tender-crisp and slightly charred.
Drain the steamed cauliflower thoroughly and place in a blender or food processor with the Greek yogurt, blending until smooth and creamy.
Serve the salmon over a bed of cauliflower mash with the garlicky green beans on the side.
