Smoky BBQ Bacon-Wrapped Meatloaf
Lean ground turkey baked into a tender loaf wrapped in crispy, sugar-free bacon and glazed with a rich, smoky BBQ sauce.
INGREDIENTS
6 oz Ground turkey
1.5 slice Sugar-free bacon
1 tbsp Almond flour
1 large Egg white
2 tbsp Sugar-free BBQ sauce
0.25 cup Yellow onion
1 clove Garlic
0.5 tsp Smoked paprika
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat oven to 375°F and line a small baking dish with parchment paper.
In a medium bowl, combine the ground turkey, almond flour, egg white, diced onion, minced garlic, smoked paprika, sea salt, and black pepper.
Mix gently by hand until just combined, being careful not to overwork the meat.
Shape the mixture into a compact loaf and place it in the prepared baking dish.
Brush 1 tablespoon of the BBQ sauce over the top of the loaf.
Wrap the bacon slices around the loaf, tucking the ends underneath.
Bake for 30-35 minutes, or until the internal temperature reaches 165°F.
Brush the remaining BBQ sauce over the bacon during the last 5 minutes of cooking for a sticky glaze.
Let rest for 5 minutes before slicing.
