Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared wild salmon served over creamy cauliflower mash and garlic-sautéed green beans, finished with a bright squeeze of zesty lemon.
INGREDIENTS
6 oz Wild-Caught Salmon Fillet
2 cups Cauliflower Florets
1.5 cups Green Beans
1/4 cup Nonfat Greek Yogurt
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, approximately 10-12 minutes.
Transfer steamed cauliflower to a food processor or blender, add the Greek yogurt and a pinch of salt, and pulse until smooth and creamy.
Heat half of the olive oil in a skillet over medium heat, add the green beans and minced garlic, and sauté for 5-7 minutes until tender-crisp.
Remove green beans from the pan and set aside.
Increase heat to medium-high and add the remaining oil to the same skillet.
Season the salmon with salt and pepper, then place it skin-side up in the pan.
Sear the salmon for 4-5 minutes per side until the exterior is golden and the internal temperature reaches 145°F.
Plate the cauliflower mash first, top with the seared salmon, and serve the garlic green beans on the side with a fresh lemon wedge.
