Crispy Golden Mac and Cheese Bites
Baked chickpea pasta and tender chicken breast bites are folded into a creamy, sharp cheddar sauce and finished with a satisfyingly golden panko crust.
INGREDIENTS
2 oz chickpea pasta
2 oz cooked chicken breast
0.25 cup non-fat Greek yogurt
0.5 oz sharp cheddar cheese
1 large egg
1 tbsp whole wheat panko breadcrumbs
0.25 tsp garlic powder
0.25 tsp onion powder
0.25 tsp sea salt
0.25 tsp black pepper
0.5 tsp olive oil
PREPARATION
Preheat your oven to 375°F and lightly grease a mini muffin tin with the olive oil.
Cook the chickpea pasta in boiling water according to package directions until al dente, then drain well.
In a medium mixing bowl, whisk together the egg, Greek yogurt, garlic powder, onion powder, sea salt, and black pepper until completely smooth.
Finely dice the cooked chicken breast and fold it into the yogurt mixture along with the cooked pasta and shredded cheddar cheese.
Spoon the mixture evenly into the prepared muffin tin slots, pressing down firmly with the back of a spoon to ensure they bind.
Sprinkle the top of each bite with a light dusting of whole wheat panko breadcrumbs.
Bake for 15-18 minutes until the edges are crispy and the cheese is bubbling.
Allow the bites to cool in the tin for at least 5 minutes to set before gently removing them with a knife.
