Crispy Sesame-Ginger Chicken Fried Rice
Sautéed chicken and chilled brown rice tossed with vibrant vegetables and a savory ginger-sesame glaze for a satisfyingly crispy texture.
INGREDIENTS
5 oz Chicken breast
0.5 cup Cooked brown rice
0.5 cup Frozen peas and carrots
0.25 cup Green onions
1 tsp Sesame oil
1 tsp Avocado oil
1 tbsp Tamari
1 tsp Ginger
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Dice the chicken breast into small, uniform bite-sized pieces and season with sea salt and black pepper.
Heat the avocado oil in a large non-stick skillet or wok over medium-high heat until shimmering.
Add the chicken to the pan in a single layer and sear without moving for 3 minutes to develop a golden crust, then flip and cook for another 2 minutes.
Push the chicken to the side of the pan and add the minced garlic and grated ginger, sautéing for 30 seconds until fragrant.
Stir in the frozen peas and carrots, cooking for 2 minutes until they are tender and the moisture has evaporated.
Add the cooked brown rice and drizzle with sesame oil; press the rice down into the pan and let it sit undisturbed for 2 minutes to achieve a crispy texture.
Pour the tamari over the rice and toss everything together until well combined and heated through.
Remove from heat and garnish with sliced green onions before serving.
