Golden Beef and Rice Stuffed Peppers
Vibrant bell peppers oven-roasted until tender and stuffed with a savory blend of lean ground beef, brown rice, and warm spices simmered in tomato sauce.
INGREDIENTS
7 oz Ground beef (93% lean)
0.33 cup Cooked brown rice
2 medium Yellow bell peppers
0.25 cup Yellow onion
1 clove Garlic
0.25 cup Tomato puree
0 tsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Smoked paprika
0.25 tsp Dried oregano
PREPARATION
Preheat your oven to 375°F (190°C) and lightly grease a small baking dish.
Slice the tops off the yellow bell peppers and remove the seeds and membranes from the inside.
In a non-stick skillet over medium heat, add the olive oil and sauté the diced yellow onion until translucent, about 3-4 minutes.
Add the minced garlic and ground beef to the skillet, breaking the meat apart with a spoon until it is fully browned.
Stir in the cooked brown rice, tomato puree, sea salt, black pepper, smoked paprika, and dried oregano.
Simmer the beef mixture for 2 minutes to allow the flavors to meld, then remove from heat.
Stand the peppers upright in the prepared baking dish and spoon the beef and rice mixture into each pepper until full.
Add 2 tablespoons of water to the bottom of the baking dish and cover the top tightly with foil.
Bake for 30 minutes, then remove the foil and bake for an additional 5-10 minutes until the peppers are tender and the tops are slightly golden.
