INGREDIENTS
6.5 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Asparagus spears
1 clove Garlic
1 tsp Extra Virgin Olive Oil
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very soft.
While cauliflower steams, trim the woody ends off the asparagus and set aside.
In a small bowl, mince the garlic and set aside for the mash.
Heat the olive oil in a non-stick skillet over medium-high heat.
Season the salmon with a pinch of sea salt and place it skin-side down in the hot skillet.
Sear the salmon for 4-5 minutes, then flip and cook for another 3-4 minutes until the center is just opaque.
During the last 5 minutes of salmon cooking, add the asparagus to the steamer basket with the cauliflower.
Remove the cauliflower from the steamer and place in a bowl; mash thoroughly with the minced garlic until smooth and creamy.
Plate the garlic cauliflower mash, top with the seared salmon, and serve alongside the steamed asparagus.
