INGREDIENTS
6 ounces Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green beans
1.5 teaspoons Olive oil
2 tablespoons Nonfat Greek yogurt
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket and cook until they are crisp-tender.
Remove the vegetables from the heat; set the green beans aside and place the cauliflower in a bowl.
Mash the cauliflower with the Greek yogurt, minced garlic, and half of the olive oil until smooth and creamy.
Season the salmon fillet with a pinch of salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes per side until the exterior is golden and the fish flakes easily with a fork.
Plate the salmon over a generous bed of the garlic cauliflower mash and serve with the steamed green beans.
