Seared Salmon with Steamed Green Beans and Cauliflower Mash
Pan-seared salmon fillet served over a creamy cauliflower mash with crisp-tender green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
6.5 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
2 tbsp Non-fat Plain Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10-12 minutes.
While the cauliflower is steaming, pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness.
Steam the green beans for about 5 minutes until they are bright green and crisp-tender.
Drain the steamed cauliflower and place it in a food processor or blender with the Greek yogurt and minced garlic, blending until smooth and creamy.
Spread the cauliflower mash on a plate, top with the seared salmon, and serve alongside the steamed green beans with a fresh squeeze of lemon juice over the fish.
