PREPARATION
Peel and cube the potato, then boil in salted water until tender, about 12-15 minutes.
Season chicken breast with half the salt and pepper.
Heat olive oil in a skillet over medium-high heat and sear chicken for 6-7 minutes per side until cooked through.
Mince the garlic and sauté it briefly in the ghee in a small pan until fragrant.
