Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with garlic-infused cauliflower mash and crisp steamed green beans, finished with a squeeze of fresh lemon.
INGREDIENTS
6 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
1/4 cup Non-fat Greek Yogurt
2 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets and minced garlic until very tender, about 10-12 minutes.
While cauliflower steams, place green beans in a steamer basket over boiling water and cook for 5-7 minutes until bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Drain the steamed cauliflower and garlic, then transfer to a blender or food processor.
Add the Greek yogurt and the remaining 1 teaspoon of olive oil to the cauliflower and blend until smooth and creamy.
Plate the garlic mashed cauliflower alongside the steamed green beans and the seared salmon fillet.
