PREPARATION
Preheat your oven to 400°F (200°C).
Season the chicken breast evenly with half of the sea salt and black pepper.
In an oven-safe skillet, heat the olive oil over medium-high heat and sear the chicken for 3-4 minutes per side until a golden crust forms.
Remove the chicken from the skillet and set aside; in the same pan, add the ghee and the sliced cremini mushrooms.
Sauté the mushrooms for 5 minutes until they release their moisture and begin to brown, then stir in the minced garlic and the remaining salt and pepper.
Place the chicken breast back into the skillet, nestling it among the mushrooms, and transfer the pan to the oven.
