Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served with garlicky green beans and creamy mashed sweet potato, finished with a squeeze of bright lemon.
INGREDIENTS
6 ounces Salmon Fillet
120 grams Sweet Potato
100 grams Green Beans
1 teaspoon Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Pierce the sweet potato with a fork and microwave for 5-7 minutes or bake until tender, then peel and mash until smooth.
Heat a non-stick skillet over medium-high heat and lightly coat the salmon with half of the olive oil and a pinch of sea salt.
Place the salmon skin-side down in the hot skillet and sear for 4-5 minutes until the skin is crisp, then flip and cook for another 2-3 minutes.
In a separate small pan, heat the remaining olive oil over medium heat and add the minced garlic, sautéing for 30 seconds until fragrant.
Add the green beans to the garlic pan with a splash of water, cover, and steam-sauté for 4-5 minutes until tender-crisp.
Plate the seared salmon alongside the sweet potato mash and garlic green beans, finishing with a squeeze of fresh lemon if desired.
