Preheat your oven to 400 degrees Fahrenheit and line a small baking sheet with parchment paper.
Rub the potato with olive oil and sea salt, then bake for 45 to 50 minutes until the skin is crispy and the center is tender.
While the potato bakes, cook the bacon in a skillet over medium heat until crispy, then remove and chop into small bits.
In the same skillet, brown the ground turkey with garlic powder and black pepper until fully cooked and slightly browned.
Carefully slice the baked potato in half lengthwise and scoop out the center, leaving a thin layer of potato against the skin.
In a small bowl, mash the potato flesh and mix it with the cooked ground turkey and half of the shredded cheddar cheese.
Stuff the mixture back into the potato skins and top with the remaining cheddar cheese and the chopped bacon bits.
Return the stuffed potatoes to the oven for 5 to 10 minutes until the cheese is melted and bubbling.
Serve immediately with a dollop of cool Greek yogurt and a sprinkle of fresh green onions.
