PREPARATION
Place the rolled oats in a high-speed blender and pulse until they reach a fine flour-like consistency.
Add the egg whites, Greek yogurt, protein powder, baking powder, cinnamon, sea salt, vanilla extract, and half of the banana to the blender.
Blend on high until the batter is completely smooth and thick.
Slice the remaining half of the banana into thin coins.
Heat a large non-stick skillet over medium-low heat and add the coconut oil to coat the surface.
Pour the batter into the skillet to form three medium pancakes, then gently press the banana coins into the top of the wet batter.
