PREPARATION
Preheat your oven to 400°F (200°C).
Toss the cubed red potatoes with half of the olive oil, half of the minced garlic, and a pinch of salt and pepper.
Spread the potatoes on a baking sheet and roast for 20-25 minutes until golden and crispy.
While potatoes roast, steam the green beans for 5-6 minutes until tender-crisp, then set aside.
Pat the salmon fillet dry and season with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 3-4 minutes until the internal temperature reaches 145°F.
