Golden Maple Pecan French Toast Bake
Sprouted grain bread soaked in a protein-rich cinnamon custard and baked until the crunchy pecan topping turns a beautiful golden brown.
INGREDIENTS
2 slices sprouted grain bread
0.75 cup egg whites
1 large egg
0.25 cup unsweetened almond milk
0.25 cup non-fat Greek yogurt
0.25 oz raw pecans
0.5 tbsp pure maple syrup
0.5 tsp ground cinnamon
0.5 tsp vanilla extract
0.13 tsp sea salt
1 tsp coconut oil
PREPARATION
Preheat your oven to 375°F and grease a small oven-safe baking dish with the coconut oil.
Cut the sprouted grain bread into one-inch cubes and spread them evenly across the bottom of the prepared dish.
In a medium mixing bowl, whisk together the egg whites, whole egg, almond milk, vanilla extract, ground cinnamon, and sea salt until well combined.
Pour the egg mixture over the bread cubes, using a spatula to gently press the bread down so every piece is fully submerged.
Roughly chop the pecans and sprinkle them over the top of the soaked bread.
Drizzle half of the maple syrup over the pecans and bake for 25 to 30 minutes until the custard is set and the top is toasted.
Remove from the oven and serve warm with a dollop of Greek yogurt and the remaining maple syrup drizzled on top.
