Smoky BBQ Bacon-Wrapped Meatloaf
Oven-baked ground turkey wrapped in crispy bacon and finished with a smoky, tangy BBQ glaze.
INGREDIENTS
4 oz Ground turkey (93% lean)
0.5 slice Sugar-free bacon
0.5 large Egg
1 tbsp Rolled oats
2 tbsp No-sugar-added BBQ sauce
0.25 cup Yellow onion
1 clove Garlic
0.5 tsp Smoked paprika
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 375°F and line a small baking dish with parchment paper.
In a large mixing bowl, combine the ground turkey, rolled oats, egg, diced onion, minced garlic, smoked paprika, sea salt, and black pepper.
Gently mix the ingredients by hand until just combined, being careful not to overwork the meat.
Shape the mixture into a compact rectangular loaf and place it in the prepared baking dish.
Lay the bacon slices across the top of the loaf, tucking the ends underneath to secure them.
Brush half of the BBQ sauce over the top of the bacon-wrapped loaf.
Bake for 35-40 minutes, or until the internal temperature reaches 165°F, brushing with the remaining BBQ sauce during the last 10 minutes of cooking.
Let the meatloaf rest for 5 minutes before slicing to ensure it stays juicy.
