Golden Pan-Seared Salmon with Zesty Roasted Vegetables
Pan-seared salmon fillet served alongside a vibrant medley of roasted broccoli and peppers tossed in a zesty lemon-herb dressing for a crisp finish.
INGREDIENTS
7 oz Salmon fillet
1 cup Broccoli florets
0.5 cup Red bell pepper
1 tsp Olive oil
1 tbsp Lemon juice
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
0.25 tsp Dried oregano
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss the broccoli florets and sliced red bell peppers with half of the olive oil, sea salt, black pepper, and dried oregano.
Spread the vegetables in a single layer on the baking sheet and roast for 15 to 18 minutes until they are tender and slightly charred.
While the vegetables roast, season the salmon fillet with garlic powder and the remaining sea salt and black pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4 minutes until the skin is crispy, then flip and cook for another 3 minutes.
Remove the salmon from the pan and drizzle with fresh lemon juice before serving alongside the zesty roasted vegetables.
