1 cup Green Beans
120g Sweet Potato
1 tsp Olive Oil
1 clove Garlic
1 tsp Lemon Juice
PREPARATION
Peel and dice the sweet potato into small chunks and boil in water for 10-12 minutes until tender.
Steam the green beans for 5 minutes until they are bright green and tender-crisp.
Pat the salmon dry and season with salt and pepper.
Heat olive oil in a skillet over medium-high heat and sear the salmon for 4-5 minutes per side until golden.
Remove salmon and in the same pan, sauté minced garlic and the steamed green beans for 2 minutes.
Drain the sweet potatoes and mash them until smooth, adding a splash of water if needed for consistency.
Plate the salmon alongside the mash and green beans, finishing with a squeeze of fresh lemon juice.
