Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared wild salmon served alongside garlic-scented green beans and nutty brown rice, finished with a squeeze of bright lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon Fillet
1/2 cup Cooked Brown Rice
1.5 cups Fresh Green Beans
1 tsp Extra Virgin Olive Oil
2 cloves Fresh Garlic, minced
1 tbsp Lemon Juice
PREPARATION
Prepare the brown rice according to package instructions and set aside.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4 to 5 minutes until the skin is crisp.
Flip the salmon and cook for another 3 to 4 minutes until the internal temperature reaches 145°F.
Remove the salmon from the pan and let it rest.
In the same skillet, add the green beans and a splash of water, covering for 2 minutes to steam-soften.
Remove the lid, add the minced garlic, and sauté for 2 more minutes until the beans are tender-crisp and the garlic is fragrant.
Plate the salmon over the brown rice with the garlic green beans on the side.
Drizzle the entire dish with fresh lemon juice before serving.
