Seared Salmon with Steamed Green Beans and Sweet Potato Mash
Pan-seared wild salmon served with creamy mashed sweet potatoes and crisp steamed green beans, finished with a bright squeeze of lemon.
INGREDIENTS
6 oz Wild Atlantic Salmon Fillet
150g Sweet Potato, peeled and cubed
100g Fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
PREPARATION
Peel and dice the sweet potato into 1-inch cubes and boil in a pot of water until tender, approximately 10-12 minutes.
Place the trimmed green beans in a steamer basket over boiling water and cook for 5-7 minutes until they are bright green and crisp-tender.
Pat the salmon fillet completely dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side up for 4 minutes until a golden crust forms.
Flip the salmon carefully and cook for another 3-4 minutes until the fish is just opaque in the center.
Drain the sweet potatoes and mash them thoroughly with the ghee until the texture is smooth and creamy.
Plate the seared salmon immediately alongside the sweet potato mash and the steamed green beans.
