10 spears Asparagus
0.25 tbsp Olive oil
2 cloves Garlic
1 sprig Fresh rosemary
0.25 tsp Sea salt

PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Trim the woody ends off the asparagus and toss the spears with olive oil, half of the sea salt, and half of the black pepper.
Spread the asparagus in a single layer on the baking sheet and roast for 12 to 15 minutes until tender-crisp.
Pat the sirloin steak dry with paper towels and season both sides with the remaining salt and pepper.
Heat a cast-iron skillet over medium-high heat and add the ghee to the pan.
Once the skillet is shimmering, sear the steak for 3 to 4 minutes per side for medium-rare, adding the smashed garlic cloves and rosemary sprig to the pan during the last 2 minutes.
Use a spoon to baste the steak with the infused ghee as it finishes cooking.
