INGREDIENTS
7 oz Salmon fillet
1 tbsp Dijon mustard
1 tbsp Hemp hearts
0.25 tsp Garlic powder
0.25 tsp Onion powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Dried parsley
1 cup Asparagus spears
1 tsp Extra virgin olive oil
1 tsp Lemon juice
PREPARATION
Preheat oven to 400°F and line a baking sheet with parchment paper.
Pat the salmon fillet dry with a paper towel and place it on one side of the prepared baking sheet.
In a small bowl, whisk together the Dijon mustard, garlic powder, onion powder, sea salt, black pepper, and dried parsley.
Spread the mustard mixture evenly over the top of the salmon, then press the hemp hearts into the mustard to create a crust.
Arrange the asparagus spears on the other side of the baking sheet and toss with the extra virgin olive oil.
Bake for 12-15 minutes until the salmon is flaky and the crust is golden.
Drizzle the lemon juice over both the salmon and asparagus before serving.
