Smoky BBQ Bacon-Wrapped Meatloaf
Lean ground turkey baked into a tender loaf wrapped in crispy turkey bacon and glazed with a rich, smoky sugar-free BBQ sauce.
INGREDIENTS
6 oz Ground turkey (93% lean)
1 large Egg
1 slices Turkey bacon
2 tbsp Sugar-free BBQ sauce
0.25 cup Yellow onion
1 tbsp Almond flour
0.5 tsp Garlic powder
0.5 tsp Smoked paprika
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat oven to 375°F (190°C) and line a small baking dish with parchment paper.
In a large bowl, combine ground turkey, egg, finely diced onion, almond flour, garlic powder, smoked paprika, sea salt, and black pepper.
Mix gently by hand until just combined, being careful not to overwork the meat which can make it tough.
Shape the mixture into a compact loaf and place it in the prepared baking dish.
Wrap the turkey bacon slices over the top of the loaf, tucking the ends underneath the meat.
Brush half of the sugar-free BBQ sauce evenly over the bacon-wrapped loaf.
Bake for 35-40 minutes until the internal temperature reaches 165°F, brushing with the remaining BBQ sauce halfway through.
Let the meatloaf rest for 5 minutes before slicing to ensure it stays juicy and holds its shape.
