Seared Salmon with Garlic Spinach and Cauliflower Mash
Pan-seared salmon served over creamy cauliflower mash and sautéed garlic spinach, finished with a squeeze of fresh lemon for a bright, zesty finish.
INGREDIENTS
6 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower Florets
3 cups Fresh Baby Spinach
1.5 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tsp Lemon Juice
PREPARATION
Steam the cauliflower florets until they are very tender, about 10-12 minutes.
Transfer the steamed cauliflower to a blender or food processor and blend with a pinch of sea salt and black pepper until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan, skin-side down, and sear for 4-5 minutes until the skin is crisp.
Flip the salmon and cook for another 2-3 minutes until cooked through to your preference, then remove from the pan and set aside.
In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
Add the fresh spinach to the skillet and toss until just wilted, about 1-2 minutes.
Plate the cauliflower mash, top with the wilted spinach and the seared salmon fillet.
Drizzle the lemon juice over the salmon just before serving.
