6 oz Salmon Fillet
150g Sweet Potato
2 cups Fresh Spinach
2 cloves Garlic, minced
1.5 tsp Extra Virgin Olive Oil
1 tbsp Lemon Juice
PREPARATION
Peel and cube the sweet potato then boil in a pot of water until fork-tender.
Drain the water and mash the sweet potato until smooth, seasoning with a pinch of sea salt.
Pat the salmon fillet dry and season both sides with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for about 4 minutes until the edges are golden.
Flip the fillet and cook for another 3 minutes until the center is just opaque.
Remove the salmon and add the minced garlic and spinach to the same skillet.
Sauté for 1-2 minutes until the spinach is wilted and fragrant.
Plate the sweet potato mash and spinach, top with the salmon, and finish with a squeeze of lemon.
