PREPARATION
Heat a large non-stick skillet over medium-low heat and melt half of the ghee.
Spread the Dijon mustard evenly across two of the bread slices.
Layer the first slice of bread with half of the cheese, half of the turkey, and all of the baby spinach.
Season the spinach layer with a pinch of sea salt and black pepper.
Top with the second slice of bread, then layer the remaining turkey and cheese on top of that slice.
Place the third slice of bread on top to complete the triple-decker stack and carefully transfer it to the skillet.
Press down lightly with a spatula and grill for 3-4 minutes until the bottom slice is golden brown.
Carefully lift the sandwich with a spatula, add the remaining ghee to the pan, and flip the sandwich to grill the other side for another 3 minutes until the cheese is fully melted.
