PREPARATION
Heat a non-stick skillet over medium heat and add the avocado oil.
Add the sliced turkey sausage to the pan and brown for 2-3 minutes until golden.
Toss in the fresh spinach and sauté until just wilted, then remove the sausage and spinach from the pan and set aside.
Wipe the pan if necessary, then pour in the egg whites, letting them cook undisturbed until the edges begin to set.
