Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon fillet served over creamy cauliflower mash and garlic-sautéed green beans, finished with a squeeze of lemon and a perfectly crisp skin.
INGREDIENTS
6.8 oz Wild Atlantic Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Fresh Green Beans
2 tbsp Non-fat Plain Greek Yogurt
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, pat the salmon fillet dry with a paper towel and season with a pinch of salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes until the skin is golden and crisp.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached, then remove from the pan to rest.
In the same skillet, add the remaining oil, green beans, and minced garlic, sautéing for 5-6 minutes until the beans are tender-crisp.
Drain the steamed cauliflower and blend or mash with the Greek yogurt until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve alongside the garlic green beans.
