Golden Pan-Seared Salmon with Roasted Asparagus
Pan-seared salmon fillet served with crisp-tender roasted asparagus and a bright squeeze of fresh lemon for a vibrant finish.
INGREDIENTS
7 oz Salmon fillet
1 bunch Asparagus
0.5 tbsp Extra virgin olive oil
1 clove Garlic
0.5 whole Lemon
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Trim the woody ends off the asparagus and place the spears on the prepared baking sheet.
Drizzle the asparagus with 0.5 tbsp of olive oil and toss with minced garlic, half of the sea salt, and half of the black pepper.
Roast the asparagus in the oven for 12 to 15 minutes until they are tender and slightly charred.
While the asparagus is roasting, pat the salmon fillet dry with a paper towel and season both sides with the remaining salt and pepper.
Heat the remaining 0.5 tbsp of olive oil in a stainless steel or cast iron skillet over medium-high heat.
Place the salmon in the pan and sear for 4 to 5 minutes until a golden-brown crust forms, then flip and cook for another 2 to 3 minutes until cooked through.
Plate the salmon alongside the roasted asparagus and finish with a fresh squeeze of lemon juice over the entire dish.
