Seared Salmon with Garlic Spinach and Mashed Cauliflower
Pan-seared salmon served over creamy cauliflower mash and sautéed garlic spinach, finished with a squeeze of bright lemon and a buttery, crisp skin.
INGREDIENTS
8 oz Salmon Fillet
1 medium head Cauliflower
4 cups Fresh Spinach
1.5 tbsp Ghee
3 cloves Garlic
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
Pat the salmon fillet completely dry with a paper towel and season both sides with salt and pepper.
Heat half of the ghee in a large cast-iron skillet over medium-high heat.
Place the salmon skin-side down in the hot skillet and sear for 4-5 minutes until the skin is golden and crisp.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached, then remove from the pan.
In the same pan, add the minced garlic and spinach, sautéing until the leaves are just wilted and fragrant.
Drain the steamed cauliflower and blend it with the remaining ghee, salt, and pepper until smooth and creamy.
Plate the cauliflower mash first, top with the garlic spinach, and place the seared salmon on top.
