PREPARATION
Heat the avocado oil in a large non-stick skillet or wok over medium-high heat until shimmering.
Add the ground chicken to the pan, seasoning with sea salt and black pepper. Break the meat apart with a spatula and cook undisturbed for 3-4 minutes to develop a golden, crispy crust.
Stir the chicken and add the minced garlic, grated ginger, and diced red bell pepper. Sauté for another 2-3 minutes until the vegetables are tender-crisp.
