Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared wild salmon served with garlic-sautéed green beans and nutty brown rice, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6.5 ounces Wild Atlantic Salmon fillet
1/2 cup cooked Brown Rice
1.5 cups fresh Green Beans
1 teaspoon Extra Virgin Olive Oil
2 cloves Garlic, minced
1/2 fresh Lemon, for juice
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Prepare the brown rice according to package instructions until tender and fluffy.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4 to 5 minutes until the skin is crispy and golden.
Flip the salmon carefully and cook for another 3 to 4 minutes until cooked through to your preference.
While the salmon is searing, steam the green beans in a steamer basket for 3 to 4 minutes until tender-crisp.
Remove the salmon from the pan and set aside to rest.
Wipe the skillet clean, add the remaining olive oil and minced garlic, and sauté for 30 seconds until fragrant.
Add the steamed green beans to the skillet and toss with the garlic for 1 minute.
Serve the salmon over the brown rice with the garlic green beans on the side, finishing with a fresh squeeze of lemon juice.
