Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over creamy mashed cauliflower with garlic-sautéed green beans, finished with a bright squeeze of lemon and a buttery, flakey texture.
INGREDIENTS
6.5 oz Wild Atlantic Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Fresh Green Beans
2 cloves Garlic, minced
0.5 tsp Extra Virgin Olive Oil
1 tbsp Fresh Lemon Juice
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very soft.
Transfer steamed cauliflower to a bowl and mash thoroughly with sea salt and black pepper until smooth and creamy.
Pat the salmon fillet dry with paper towels and season both sides with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat and place the salmon skin-side down.
Sear the salmon for 4-5 minutes until the skin is crisp, then flip and cook for another 3-4 minutes until cooked through.
Remove salmon from the pan and add the green beans and minced garlic, sautéing for 3-5 minutes until tender-crisp.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side with a fresh lemon wedge.
