Crispy Sesame-Ginger Chicken Fried Rice
Sautéed chicken and chilled rice stir-fried with aromatic ginger and crisp vegetables, finished with a drizzle of toasted sesame oil for a nutty, savory finish.
INGREDIENTS
5 oz Chicken breast
0.5 cup Cooked jasmine rice
1 tsp Avocado oil
1 tsp Toasted sesame oil
0.5 cup Frozen peas and carrots
2 stalk Green onions
1 tbsp Tamari
1 tsp Fresh ginger
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Heat avocado oil in a large skillet or wok over medium-high heat.
Season diced chicken with sea salt and black pepper, then sear in the hot pan until golden brown and cooked through.
Remove the chicken from the pan and set it aside on a plate.
In the same pan, add the grated ginger, minced garlic, and the sliced white parts of the green onions, sautéing for 1 minute until fragrant.
Toss in the frozen peas and carrots, cooking for 2 to 3 minutes until tender and heated through.
Add the chilled jasmine rice to the pan, pressing it down firmly with a spatula to allow the bottom to crisp for 2 minutes before stirring.
Drizzle with tamari and toasted sesame oil, then fold the cooked chicken back into the rice mixture and garnish with the green onion tops.
