Seared Salmon Fillet with Steamed Broccoli and Garlic Mashed Cauliflower
Pan-seared salmon served with tender steamed broccoli and a creamy garlic cauliflower mash, finished with a drizzle of rich, melted ghee.
INGREDIENTS
5.5 oz Salmon Fillet
2 cups Cauliflower florets
1.5 cups Broccoli florets
1 tbsp Extra Virgin Olive Oil
1.5 tbsp Ghee
2 cloves Garlic
PREPARATION
Place cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, add the broccoli florets to the steamer for the last 5 minutes of cooking until bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat olive oil in a stainless steel or cast iron skillet over medium-high heat.
Place salmon skin-side down in the hot pan and sear for 4-5 minutes until the skin is crisp, then flip and cook for another 2-3 minutes to your desired doneness.
Transfer the steamed cauliflower and garlic to a blender or food processor with the ghee and a pinch of salt, blending until smooth and creamy.
Serve the seared salmon alongside the garlic cauliflower mash and steamed broccoli.
