Golden Pan-Seared Salmon with Zesty Rice
Pan-seared salmon seasoned with turmeric and garlic, served over a bed of zesty lemon-infused rice and tender wilted spinach.
INGREDIENTS
6.5 oz Salmon fillet
0.5 cup Cooked jasmine rice
1 tsp Olive oil
1 tsp Lemon zest
1 tbsp Lemon juice
1 cup Fresh baby spinach
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
0.25 tsp Ground turmeric
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides evenly with sea salt, black pepper, garlic powder, and ground turmeric.
Heat the olive oil in a non-stick skillet over medium-high heat until the oil is shimmering.
Place the salmon in the pan skin-side down and sear for 4 to 5 minutes until the skin is crispy and the edges turn opaque.
Carefully flip the salmon and cook for another 3 to 4 minutes until the center is cooked through and the exterior is beautifully golden.
While the salmon rests, combine the warm cooked rice with lemon zest, lemon juice, and fresh baby spinach in a medium bowl, stirring until the spinach just begins to wilt.
Plate the zesty rice and place the golden salmon fillet on top to serve immediately.
