Pan-Seared Salmon with Garlic Herb Potato Mash and Steamed Greens
Pan-seared salmon served over a garlic and chive potato mash with steamed asparagus, finished with a squeeze of zesty lemon and a sprinkle of flaky sea salt.
INGREDIENTS
6 oz Salmon Fillet
150g Potato, peeled and cubed
1/4 cup Non-fat Greek Yogurt
100g Asparagus spears
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp Lemon Juice
Fresh chives, salt, and pepper to taste
PREPARATION
Place the cubed potatoes in a pot of salted water and bring to a boil, cooking until tender for about 12-15 minutes.
While potatoes boil, season the salmon fillet with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes until crispy.
Flip the salmon and cook for another 2-3 minutes until the internal temperature reaches your desired level of doneness.
Steam the asparagus in a steamer basket over boiling water for 3-5 minutes until bright green and tender-crisp.
Drain the potatoes and return them to the pot, then mash them with the Greek yogurt, minced garlic, and chopped chives until smooth.
Plate the garlic herb mash alongside the steamed asparagus and top with the pan-seared salmon.
Finish the dish with a fresh squeeze of lemon juice and a sprinkle of flaky sea salt.
