Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served with creamy mashed sweet potatoes and snap-fresh green beans, finished with a touch of aromatic toasted garlic.
INGREDIENTS
7 oz Wild Atlantic Salmon Fillet
150g Sweet Potato
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in water until tender.
Drain the sweet potato and mash until smooth, adding a pinch of sea salt if desired.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes per side until the skin is crisp and fish is cooked through.
Remove the salmon from the pan and set aside to rest.
Add the remaining olive oil to the same skillet along with the green beans and minced garlic.
Sauté the green beans for 3-5 minutes until they are tender-crisp and the garlic is fragrant.
Plate the sweet potato mash, top with the seared salmon, and serve the garlic green beans on the side.
