Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served over creamy garlic-infused cauliflower mash with a side of snappy steamed green beans.
INGREDIENTS
6 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower Florets
1 cup Fresh Green Beans
1 tbsp Ghee
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
While the cauliflower is steaming, pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick or cast-iron skillet over medium-high heat.
Place the salmon in the pan and sear for 4 to 5 minutes per side, or until the internal temperature reaches 145°F and the exterior is golden brown.
Steam the green beans for 5 to 6 minutes until they are bright green and tender-crisp.
Transfer the steamed cauliflower to a bowl or food processor, add the ghee and minced garlic, and blend or mash until smooth and creamy.
Plate the salmon fillet on a bed of the garlic cauliflower mash and serve with the steamed green beans on the side.
