PREPARATION
Thinly slice the yellow onion into half-moons.
Heat a non-stick skillet over medium-low heat with half of the olive oil and cook the onions, stirring occasionally, until they are soft and golden brown.
While onions cook, season both sides of the sirloin steak with the sea salt and black pepper.
Remove the onions from the skillet and set aside. Increase the heat to medium-high and add the remaining olive oil.
