Tender Gochujang Beef with Crispy Rice
Sautéed lean ground beef glazed in a spicy-sweet gochujang sauce, served over golden-brown crispy rice with tender bok choy and aromatic ginger.
INGREDIENTS
5.25 oz Ground beef
0.25 cup Cooked jasmine rice
1 tbsp Gochujang
1 tbsp Tamari
0.25 tsp Sesame oil
1 cup Baby bok choy
1 clove Garlic
1 tsp Fresh ginger
2 whole Green onions
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Heat a non-stick skillet over medium-high heat with half of the sesame oil.
Press the cooked jasmine rice into the skillet in an even, flat layer and cook undisturbed for 5 minutes until the bottom is golden-brown and crispy.
Carefully remove the crispy rice from the pan and set aside; add the remaining sesame oil and the ground beef to the same skillet.
Brown the beef, breaking it into small crumbles with a spatula, until it is fully cooked through.
Stir in the minced garlic, grated ginger, and chopped baby bok choy, sautéing for 2 minutes until the greens are tender and vibrant.
In a small bowl, whisk together the gochujang and tamari, then pour the sauce over the beef mixture and toss to coat evenly.
Season the beef and vegetables with sea salt and black pepper.
Serve the saucy gochujang beef over the crispy rice and garnish with thinly sliced green onions.
